RECIPES for

HUMMOUS

(most delicious food in the explored universe)




STANDARD, AS GIVEN TO ME BY SOME PALISTINIAN GUYS IN COLLEGE....

Into a standard blender, place:

2/3 cup well-mixed sesame tahini
1/4 cup lemon juice
1/4 cup water or juice from canned garbanzo beans (chick peas)
about 2 to 6 grape-size cloves of fresh garlic (depending on how much you like garlic)
1 Tablespoon cumin
1 teaspoon black pepper
1 teaspoon salt (personally, I don't use any salt)
Top off blender with drained canned garbanzo beans (chick peas), (about 2 cans or so)
Blend the living crap out of the above until it's smooth and creamy
Be careful... I have burned out blender motors doing this
Put on a flat plate, about as thick as a waffle
Pour some rich, virgin, "robust flavor" olive oil on top (not the weenie light stuff)
Sprinkle on top some fresh paprika
Use as a dip with pita bread (preferably whole-wheat)


WESTERN MEDITERRANEAN MODIFICATIONS

As preferred by Greeks and their neighbors, same as the above except...

More lemon juice
Less cumin
Olives or olive slices floating in the olive oil garnish instead of paprika



EASTERN MIDDLE-EASTERN MODIFICATIONS

As given to me by a woman from Pakistan. My favorite version. Same as base recipe above but...

Go heavy on the garlic
Make the cumin a "heaping Tablespoon", as opposed to the non-heaping Tablespoon
Add a Tablespoon of red / cayenne pepper powder






JAMAICAN JERK CHICKEN

Use chicken thighs and wings. Don't use legs. Use breasts only if you chop them up into several pieces first...

Ingredients:
Walkerswood Jerk Seasoning Marinade (Spicy). One jar does about 20 thighs. Using this is the easy way and is almost as good as the hard way.
Pimentos. (The little hard, black, round things that look like peppercorns). One heapin' tablespoon, crushed, does about 20 thighs.
Olive oil.
Chicken.

Procedure:
Wet the chicken up real good with olive oil. Other kinds of oil can probably be substituted, but I wouldn't.
Mix the marinade and pimentos onto the chicken.
Let it sit in the 'fridge for 2 days.
Cook on a grill. Oven cooking ain't nearly as good.
Bone appy teat.
